{"id":17440,"date":"2019-12-09T09:43:11","date_gmt":"2019-12-09T08:43:11","guid":{"rendered":"https:\/\/sboverseas.org\/?p=17440"},"modified":"2019-12-09T09:43:11","modified_gmt":"2019-12-09T08:43:11","slug":"dinner-with-haifa","status":"publish","type":"post","link":"https:\/\/sboverseas.org\/nl\/dinner-with-haifa\/","title":{"rendered":"Dinner with haifa"},"content":{"rendered":"<p><strong>BUTHAINA\u2019S RECIPES<\/strong><\/p>\n\n\n\n<p><em>During my stay in Saida,\nLebanon \u2013 volunteering with SB, I had the chance to spend a lovely afternoon at\nButhaina\u2019s place, learning some of the secrets which make her one of the best\ncooks of the shelter. Since I was very curious about the life of such a wonderful\nwoman, Buthaina and I tried to have a conversation so that I could have the\nopportunity to know her better: imagine the result of it with my very poor\nArabic and her sweet English\u2026<\/em><\/p>\n\n\n\n<p>To break the ice, I asked her a silly question and I got a\nfunny answer: \u201cButhaina, why do you like cooking so much?\u201d She replied:\n\u201cBecause I like eating very much! But I would also like to lose some weight!!\u201d<\/p>\n\n\n\n<p>Buthaina learned everything she knows about food from her\nmum. She is the eldest of many siblings and for this reason, she had to start\nhelping and supporting her mum when she was 13. <\/p>\n\n\n\n<p>During the 4 months I spent with SB, Wednesdays had always\nbeen my favorite day of the workweek: Lunchtime would be greeted by the aromatic smell of Syrian cuisine,\nfollowed by Buthaina with a huge tray of scrumptious dishes in her hands. She\nnever stayed for the meal, Before leaving us to enjoy the food, she would walk\ninto each classroom to ensure that everyone was aware that lunch was served,\nAlthough lunch was only 40 minutes tops, she would only come back an hour\nlater. She would walk into the office grinning from ear to ear at the sight of\nthe now-empty trays knowing that we\nappreciated her amazing gift. <\/p>\n\n\n\n<p>Her favorite dish to cook is Shish Barak. Cooking Shish\nBarak brings her back to when she was with her family and especially her dad, the one who taught her how to do it. Buthaina\nwanted to cook it for us (volunteers) but she could not, since many of us were\nvegetarian. The first time she ever prepared it was during Ramadan; when she\nwas only with her father and brother. It is common, during Ramadan, to cook the\nmost special dishes of their culture \u2013 of course in large quantities \u2013 and to\nshare the desired meal with their loved ones. <\/p>\n\n\n\n\n\n<p>Buthaina told me more about her Ramadan traditions since I\ndidn\u2019t know much about it. <\/p>\n\n\n\n<p>During Ramadan, she cooks in large quantities to share\nthose exact trays of food she shared with us, with her neighbors who are like a\nfamily to her. To her, sharing her cooking brings her the greatest pleasure. In\nfact, she feeds half the number of people who lives on the same floor as her in\nthe shelter! She is known as the cook of the Ouzai shelter &#8211; when there are\nhuge celebrations, she is the Head Chefand:\ninstructs her sous chefs on what to do, and how to cook! <\/p>\n\n\n\n<p>When Buthaina came to Lebanon with her family in 2011, she\nhad to learn new recipes to adapt to the local traditions\nand to cook according to the ingredients available in Lebanon. She does her\ngrocery shopping in Saida or in a make-shift fruit and vegetable store in the\nshelter. <\/p>\n\n\n\n<p>Cooking for us volunteers meant taking care of us, and it\nis easy to feel it when you are being fed with love every week. She told me\nthat she does this to thank us for our presence and support we have been\nproviding the community with. On top of that, it is to thank us for the support\nwe tried to give her with a resettlement procedure; she is trying to get the\nfamily\u2019s documents in order so that she can leave Lebanon to join her husband\nin Germany. <\/p>\n\n\n\n<p>She is very thankful to SB Overseas because her children\u2019s\npublic school grades are improving and she also enjoys the empowerment program\nwhere she gets to interact with volunteers and use the safe space to hang out\nwith her friends. Her English is improving very fast and she is determined to\nmake it better for herself and her family!<\/p>\n\n\n\n<p><strong>SALAD<\/strong><\/p>\n\n\n\n<p><em>INGREDIENTS<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>1 red cabbage<\/em><em><\/em><\/li><li><em>1 white cabbage<\/em><em><\/em><\/li><li><em>1 bunch of mint<\/em><em><\/em><\/li><li><em>1 bunch of parsley<\/em><em><\/em><\/li><li><em>5 cucumbers<\/em><em><\/em><\/li><li><em>5 tomatoes<\/em><em><\/em><\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/sboverseas.org\/wp-content\/uploads\/2019\/12\/Taboule-300x225.jpg\" alt=\"\" class=\"wp-image-17441\"\/><\/figure>\n\n\n\n<p>METHOD<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Cut all the ingredients in small\npieces and mix together in a large bowl. <\/li><li>Add lemon, water and salt before\nserving. <\/li><\/ul>\n\n\n\n<p><strong>FOUL \u2013 Beans<\/strong><\/p>\n\n\n\n<p><em>INGREDIENTS<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>500g of Kidney beans (or brown\nbeans)<\/em><em><\/em><\/li><li><em>2 <\/em><em>cloves of garlic<\/em><em><\/em><\/li><li><em>Oil<\/em><em><\/em><\/li><li><em>Parsley<\/em><em><\/em><\/li><li><em>Lemon<\/em><em><\/em><\/li><li><em>Mint (and dry mint)<\/em><em><\/em><\/li><li><em>Pepper<\/em><em><\/em><\/li><li><em>Salt<\/em><em><\/em><\/li><\/ul>\n\n\n\n<p>METHOD<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>BoiI the brown beans until cooked and\nsoft. Leave them to cool.<\/li><li>In a mixer, add the beans, garlic, a\nbit of parsley, lemon, mint, salt and oil.&nbsp;\n<\/li><li>Mix till the ingredients are mildly\nchunky.<\/li><li>Taste and it is ready to serve!<\/li><\/ul>\n\n\n\n<p><strong>KABSE \u2013 Rice with turmeric and carrots<\/strong><\/p>\n\n\n\n<p><em>INGREDIENTS<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>500g Egyptian rice<\/em><em><\/em><\/li><li><em>50 g margarine<\/em><em><\/em><\/li><li><em>5 big spoons of sunflower oil<\/em><em><\/em><\/li><li><em>7 carrots<\/em><em><\/em><\/li><li><em>Cloves<\/em><em><\/em><\/li><li><em>Black pepper<\/em><em><\/em><\/li><li><em>Turmeric<\/em><em><\/em><\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/sboverseas.org\/wp-content\/uploads\/2019\/12\/Makloube-and-Taboule-300x225.jpg\" alt=\"\" class=\"wp-image-17442\"\/><\/figure>\n\n\n\n<p>METHOD<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Cut carrots in small cubes.<\/li><li>In a big pot, heat margarine and oil. <\/li><li>When the oil is really hot and ready,\nfry the carrots for 8-9 minutes, until it softens. <\/li><li>Add a tablespoon of salt, cloves,\nblack pepper and two tablespoons of turmeric. <\/li><li>In a large bowl, put 500g of rice and\ncover it with water; mix and rinse it. <\/li><li>Leave it for 10 minutes. <\/li><li>When carrots have softened, add water\nand more salt. <\/li><li>When the water boils, add the rice and\nthe water used to rinse it.<\/li><li>Add turmeric if does not look yellow\nenough \u2013 cook for 30 minutes. <\/li><li>Transfer the rice in a nice tray and\nserve it!<\/li><\/ul>\n\n\n\n<p><strong>LABAN W TAHINE W FOUL &#8211; Brown beans with Yoghurt and Tahini<\/strong><\/p>\n\n\n\n<p><em>INGREDIENTS<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>500 g brown beans<\/em><em><\/em><\/li><li><em>2 garlic<\/em><em><\/em><\/li><li><em>5 tablespoons of Laban <\/em><em><\/em><\/li><li><em>8 tablespoons of water<\/em><em><\/em><\/li><li><em>1 tablespoons of Tahini <\/em><\/li><li><em>Few leaves of dry mint<\/em><em><\/em><\/li><\/ul>\n\n\n\n<p>METHOD<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Boil the brown beans till it softens.<\/li><li>Smash the garlics<\/li><li>Mix the Laban with water<\/li><li>Mix all the ingredients together and\nserve them on a tray!<\/li><\/ul>\n\n\n\n<p><strong>&nbsp;DINNER WITH HAIFA<\/strong><\/p>\n\n\n\n<p><em>Haifa and I were colleagues &#8211; she had been my co-teacher\nfor the period of time I had spent with SB. Haifa\u2019s passion is working with\nchildren. She is committed, passionate, talented and full of imagination. While\nI got my materials settled in the classroom, she would invent a game or an\nactivity or a sing and dance session on the spot. I would walk into class\nsmiling, knowing that I can depend on her for last minutes ideas to perk the\nclass up or to get the students\u2019 attention again. Her smile is magnetic, her\npatience is endless. Her bright eyes let her optimistic soul shine. I would\nlike to thank her because I learned from her every single day; not only how to\nmanage a class of 25 little cheeky students, but also how to stay optimistic,\nreact kindly and be smart in during a chaotic class. In my opinion, she is the\nperfect teacher and a wonderful mum.&nbsp; Her\nchildren absolutely adore her. She has definitely instilled great values in\nthem \u2013 they are the sweetest, kindest and funniest little humans I have met. She\nwas and still is the model teacher I tried to follow and imitate while I was\nwith SB. There have even been times when I have had thoughts that one day I\nwould have been a mum like her. <\/em><\/p>\n\n\n\n<p><em>Then one day, she invited me for dinner in her home; I was\nenthusiastic about that I imposed some conditions: we spend the afternoon\nchatting about life (not work), sharing recipes from each of our cultures and\nplaying with her children. Agreed! And this was the result\u2026 <\/em><\/p>\n\n\n\n<p><strong>TABOULEH<\/strong><\/p>\n\n\n\n<p><em>INGREDIENTS<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>Mint<\/em><em><\/em><\/li><li><em>Roman Lettuce<\/em><em><\/em><\/li><li><em>3 tomatoes<\/em><em><\/em><\/li><li><em>Parsley <\/em><em><\/em><\/li><li><em>3 lemons<\/em><em><\/em><\/li><li><em>Olive oil<\/em><em><\/em><\/li><li><em>200g of Burghul <\/em><em><\/em><\/li><li><em>Salt to taste <\/em><em><\/em><\/li><li><em>Pepper to taste <\/em><em><\/em><\/li><li><em>Cumin<\/em><em><\/em><\/li><li><em>1 spring onion <\/em><em><\/em><\/li><li><em>Half a litre of boiled water<\/em><em><\/em><\/li><\/ul>\n\n\n\n<p>METHOD<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Finely chop parsley, spring onion\n(also the green part), tomatoes, lettuce and mint. <\/li><li>Mix the chopped ingredients in a bowl<\/li><li>In\nseparate bowl, add Burghul, salt and pepper. Pour half of a litre of boiled\nwater and leave it for 15 to 20 minutes until tender. Drain excess liquid.<\/li><li>Add drained Burghul to the bowl with\nchopped ingredients.<\/li><li>Add cumin, salt to taste, 3 squeezed\nlemons and olive oil. <\/li><li>Mix and the salad is ready to serve!<\/li><\/ul>\n\n\n\n<p><strong>MAKLOUBE<\/strong><\/p>\n\n\n\n<p><em>INGREDIENTS<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><em>2 large eggplants<\/em><em><\/em><\/li><li><em>2 potatoes<\/em><em><\/em><\/li><li><em>Sunflower oil<\/em><em><\/em><\/li><li><em>300g of American rice<\/em><em><\/em><\/li><li><em>Butter\/margarine<\/em><em><\/em><\/li><li><em>1 Onion <\/em><em><\/em><\/li><li><em>3 Vegetable stock<\/em><em><\/em><\/li><li><em>1 kg of cut chicken <\/em><em><\/em><\/li><li><em>Salt to taste<\/em><em><\/em><\/li><li><em>Ashtray<\/em><em><\/em><\/li><li><em>3 pieces of carbon<\/em><em><\/em><\/li><li><em>A quarter of a ginger <\/em><\/li><li><em>Baharrat Spice Mix to taste<\/em><em><\/em><\/li><\/ul>\n\n\n\n<p>METHOD<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Cut the eggplants and potatoes into\nsmall cubes and fry them in sunflower oil. When they are ready, drain out the\noil. <\/li><li>Put the rice into a bowl to rinse with\nsome water. <\/li><li>In a big pot, add 2 sliced onions, 3\npieces of crushed garlic and 3 tablespoons of butter (or margarine). <\/li><li>Sautee until the onion is brown. Add\nsome of the fried eggplant and potatoes. Fried while ensuring that the large\npieces are softens to a puree-like texture. <\/li><li>Add 4\ncups of water and wait until it boils.<\/li><li>Add\nsalt, 3 vegetables stocks, ginger and Baharrat spice mix.<\/li><li>Cover the pot with a lid and cook over\nlow heat until the rice has absorbed all the water. <\/li><li>In the meantime, prepare a clean\nashtray with 3 carbons in it. Place the ashtray on the surface of the rice and\ncover the pot. <\/li><li>Leave it for 5 minutes, then strain\nthe liquid from the carbon into the rice and mix it all together to have a\nsmoky flavor.<\/li><li>In separate pot, add some oil and the\nchicken pieces. When the oil is hot, add the leftover of the fried vegetables.\nLeave the chicken to cook for 15\/20 minutes and then add all the rice into pot.\n<\/li><li>In a small pan, fry cashews in some\noil.
